Ginger & Orange Saucy Courgettes


  • 1 tbsp Worcestershire sauce
  • 2 tbsp water
  • zest & juice of 1 large orange
  • zest & juice of 1/2 lemon
  • 1 level tsp cornflour
  • 340g/12 oz courgettes
  • 4 spring onions, chopped
  • 2" piece of ginger, finely chopped
  • 2 tbsp cider or white wine vinegar
  • 1 tbsp soy sauce
  • 3 tsp artificial sweetener

Place the courgettes whole into a saucepan of salted water, bring to the boil and simmer for 840 minutes. Drain and cut lengthways into strips and arrange on a serving plate. Place the remaining ingredients, except the cornflour, into a small saucepan and bring to the boil, simmering for 3 minutes. Mix the cornflour with a little cold water and stir into the sauce, continuing to stir until the sauce thickens. Pour the sauce over the courgettes and serve.
