Easy Vegetable Soup


  • 170g/6 oz leeks, chopped
  • 142g/5 oz carrots, chopped
  • l42g/5 oz onions, chopped
  • 142g/5 oz celery, chopped
  • 2 garlic cloves, crushed
  • 1/2 tsp black pepper
  • 57g/2 oz yellow split peas, soaked
  • 568ml/1 pt stock made with Vecon
  • salt & ground black pepper

Place all the ingredients into a saucepan and bring to the boil, simmering for 15-20 minutes until the vegetables are tender. For a smoother consistency transfer the soup into a blender and puree before returning to the saucepan to heat through. Season to taste before serving.
