Vegetable-Kebabs-with-Peanut-Sauce_cIngredients:
* 3 courgettes, trimmed
* 3 tablespoons oil
* 3 tablespoons lemon juice
* 8 canned baby corn cobs
* 500 g (1 lb) cup mushrooms
* 8 button mushrooms
* 2 tomatoes, quartered

Sauce:
* 2 tablespoons oil
* 1 small onion, chopped
* 250 g (8 oz) flat mushrooms, chopped
* 125 g (4 oz) roast salted peanuts
* 150 ml (1/4 pint) water
* 2 tablespoons soy sauce
* few drops of Tabasco sauce
* salt and pepper

1. Cut the courgettes into 2.5 cm (1 inch) pieces. Put them with the oil, lemon juice, corn cobs and mushrooms in a bowl, mix lightly and leave to stand for at least 2 hours, stirring occasionally.
2. To make the sauce, heat the oil and fry the onion and mushrooms for 8 minutes. Transfer to a blender and blend for 30 seconds. Add the peanuts and blend for 30 seconds until smooth. Return to the pan, stir in the water, soy sauce and Tabasco, and simmer for 10 minutes.
3. Thread the marinated vegetables, onion and tomato wedges on to 4 skewers. Place them on an oiled grid over a preheated barbecue and grill for about 10 minutes, turning occasionally. Serve with the sauce handed separately.
