1 lb fillet of veal
1 x 8 oz can red pimentos, drained
2 tablespoons flour
2 tablespoons vegetable oil
1 small onion, chopped
1/2 pint hot chicken stock
salt and freshly ground pepper
1 egg yolk
1/4 pint sour cream

500 g fillet of veal
1 x 225 g can red pimentos, drained
2 x 15 ml spoons flour
2 x 15 ml spoons vegetable oil
1 small onion, chopped
300 ml hot chicken stock
salt and freshly ground pepper
1 egg yolk
150 ml sour cream


Slice the veal, then cut the veal and pimentos into thin 7.5 cm/3 inch strips. Combine the flour and oil in a large deep dish and MICROWAVE ON HIGH for 3 minutes. Stir in the onion and MICROWAVE ON HIGH for 4 minutes, stirring occasionally. Add the veal strips and MICROWAVE ON HIGH for 2 minutes, stirring after 1 minute. Pour the chicken stock over the veal and season. Gently stir in the pimentos and cover. MICROWAVE ON HIGH for 5 minutes. Stir, then MICROWAVE ON LOW for 10 minutes until the veal is tender.
Beat the egg yolk and sour cream together, then blend in a little of the hot sauce. Stir this mixture into the dish, then MICROWAVE ON LOW for 2-3 minutes until the sauce has thickened. Leave to stand covered for 5 minutes before serving.
