* 100 g (4 oz) tuna in oil
* 1 tbsp mayonnaise
* 1/2 tsp lemon juice
* 1/4 tsp paprika
* 50 g (2 oz) frozen or canned sweetcorn
* 40 g (1 1/2 oz) thinly sliced cucumber, red pepper (capsicum) or celery
* shredded Iceberg lettuce
* 2 mini-tortillas
* 2 chives (optional)

Drain the tuna and mix together with the mayonnaise, lemon juice and paprika. Stir in the sweetcorn and cucumber, red pepper or celery. Place the tuna mixture along the centre of the tortilla. Cover with some shredded lettuce and roll up. You can then secure the tortilla by tying a chive around it.

Serves: 2 portions
