Trout with Almonds
* 4 medium trout, cleaned
* 1 lemon
* 2oz (50g) butter
* 2oz (50g) toasted flaked almonds
1. Arrange the trout on a microproof serving dish, two fish facing one way and two facing in the opposite direction. Shield the heads and tails of the fish with small strips of foil, cut 2-3 slits across each fish, cover dish with pierced clear film and cook on full power for 8 minutes.
2. Cut the lemon in half and stand the two halves in a microproof bowl, cut sides facing down. Heat on full power for 30 seconds. Squeeze out juice and discard shells. Add butter and almonds to the lemon juice and heat on full power for 30 seconds. Mix well and pour over the trout.
3. Return the fish to the microwave and cook on full power for 2 minutes. Serve.
