* 1 1/2 lb (675g) green or red tomatoes, skinned and sliced
* 1 small red pepper, cored, seeded and chopped
* 1 large onion, chopped
* 6oz (175g) Bramley apples, weighed when peeled, cored and chopped
* 3oz (75g) raisins
* 1 level tablespoon salt
* 1/2 inch (1cm) piece, peeled
root ginger
* a little Cayenne pepper
* 6oz (175g) dark or light muscovado sugar
* 1/2 pint (300ml) malt vinegar

Measure all the ingredients into a large microproof bowl and mix well. Cook on full power for 15-20 minutes until the mixture is thick and pulpy, stirring twice during cooking. Remove the piece of root ginger and pot in clean warm jars. Seal with plastic or vinegar-proof lids.
