Tomato-baked-eggs_cIngredients:
* 1 large beefsteak tomato
* salt and ground black peper
* 1 garlic clove, crushed (optional)
* Fry Light, for spraying
* 2 small eggs
* 1 teaspoon finely chopped parsley

1. Slice the tomato in half horizontally, and then scoop out all the seeds. Season lightly with some salt and pepper and sprinkle with a little crushed garlic, if using.
2. Spray a baking tray lightly with Fry Light. Break an egg into each tomato halt, then sprinkle with chopped parsley and place on the sprayed baking sheet.
3. Bake in a preheated oven at 180°C 350°F, Gas Mark 4 for 15-20 minutes, until the tomatoes have softened and the eggs are set. Eat immediately while they are still hot.
