* 1 quantity Traditional Pizza Dough, shaped and ready for topping

* 1 red pepper (capsicum)
* 1 yellow pepper (capsicum)
* 1 green pepper (capsicum)
* 2 tomatoes, skinned
* 3 tablespoons olive oil
* 1 onion, finely chopped
* 1 clove garlic, crushed
* salt and pepper
* pinch of dried oregano
* oregano sprigs and olives, to garnish

1. Make the topping. Skin peppers (capsicums): spear one at a time with a fork and hold over a gas flame for 5-10 minutes until black and blistered. Alternatively, halve and seed peppers (capsicums). Place under preheated grill until black. Peel skin off with a knife.
2. Chop red pepper (capsicum); quarter, seed and chop tomatoes. Put in a saucepan with 2 tablespoons oil, onion and garlic. Cook until soft. Preheat oven to 220C (425F/Gas 7). Brush dough with a little oil.
3. Spread pepper (capsicum) mixture over dough. Season to taste with salt and pepper. Sprinkle with oregano. Cut remaining peppers (capsicums) in strips. Arrange over pizza. Season to taste with salt and pepper. Sprinkle with remaining oil. Bake in the oven for 20 minutes until dough is crisp and golden. Garnish with oregano and olives.
