200 g/7 oz self-rising flour
1 egg
200 ml/7 fl oz milk
juice and zest of 1 orange,
2 teaspoons cinnamon
100 g/3 1/2 oz sugar
30 g/1 oz butter

Preparation. Sieve the flour with a pinch of salt into a bowl. Add the egg and half the milk and mix until a smooth batter. While stirring, thin out the batter with the remaining milk. Stir in the orange juice and grated zest.
• Combine the cinnamon and sugar in a small bowl. Cooking. Heat the butter in a frying pan and add three heaped spoonfuls of batter. Bake the three-in-a-pan over moderate heat until light brown, then turn and bake on the other side until golden brown. Repeat the process with the remaining batter. Keep the pancakes warm.
• Serve with cinnamon sugar.
• Delicious with a liberal spoonful of marmalade.
