* 1 quantity Traditional Pizza Dough, shaped and ready for topping
* 1 tablespoon vegetable oil

* 1 clove garlic, chopped
* 185 g (6 oz / 1 1/2 cups) grated Cheddar cheese
* 185 g (6 oz / 1 1/2 cups) grated Gruyere cheese
* 2 tablespoons kirsch
* freshly grated nutmeg
* pepper
* red pimento and oregano sprigs, to garnish

1. Preheat oven to 220C (425F/Gas 7). Brush dough with oil and sprinkle dough with garlic and grated cheeses. Sprinkle with kirsch, nutmeg and pepper. Bake in the oven for 20 minutes until dough is crisp and golden.
2. Serve the pizza garnished with pimento strips and oregano sprigs.

Serves: 6-8

Variation: Substitute the same quantity of Emmental cheese for the Gruyere cheese, if preferred.
