* 500 g (1 lb) butternut squash (pumpkin) or pumpkin

1. Peel and de-seed a squash or slice of pumpkin, then cut into small pieces. Place in a steamer and cook until tender (about 15 minutes). Alternatively, place in a pan with a little water, cover and simmer until tender. Drain and blend to a puree, adding a little of the cooking water if necessary.
2. Butternut squash can also be baked in the oven. Pre-heat an oven to 180°C/350°F/Gas Mark 4. Cut the squash in half, scoop out the seeds and brush with some melted unsalted butter. Cover with foil and bake in the oven until tender (about 1 1/4 hours).
3. To microwave, peel and dice the squash. Place in a suitable microwave dish and sprinkle over 3 tablespoons of water. Cover with microwave film, pierce and cook on high for 7 to 8 minutes, stirring halfway through. Let stand, covered, for 4 minutes. Puree and then spoon some of the puree into your baby's bowl and serve lukewarm.
