* 2 teaspoons cornflour
* 1 tablespoon caster sugar
* 1 tablespoon white wine vinegar
* 2 level tablespoons tomato puree
* 1 tablespoon sherry
* 2 tablespoons sunflower oil
* 4 tablespoons pineapple juice from the can
* 12oz (350g) fillet of pork, cut into 1/2 inch (1 cm) slices
* 1 small green pepper, seeded and diced
* 7 3/4 oz (220g) can pineapple chunks, drained
* salt
* freshly ground black pepper

1. Measure the cornflour into a microproof bowl and blend in all the remaining ingredients, except the pineapple chunks. Cover with pierced clear film or a lid and cook on full power for 15 minutes, stirring twice during cooking. Stir in the pineapple chunks for the last 3 minutes of cooking time.
2. Season to taste with salt and pepper and serve with plain boiled rice.
