2 large courgettes
2 thick slices bread, crusts removed
6 tablespoons milk
1/2 oz soft margarine
4 tablespoons finely chopped nuts
4 tablespoons grated Cheddar cheese
1egg
1 tablespoon chopped fresh parsley


Metric
2 large courgettes
2 thick slices bread, crusts removed
6 x 15 ml spoons milk
15 g soft margarine
4x 15 ml spoons finely chopped nuts
4 x 15 ml spoons grated Cheddar cheese
1 egg
1 x 15 ml spoon chopped fresh parsley


Cut the courgettes in half lengthways. Place the bread in a bowl and pour over the milk. Leave until the milk is absorbed. Mash the bread then stir in the margarine, nuts, cheese and egg to form a soft stuffing. Pile on top of the courgettes and arrange them close together in a dish. MICROWAVE ON HIGH for 4-5 minutes or until just tender. Sprinkle with parsley.
