* 1 1/2 lb (700 g) smoked chicken
* 1 lb (450 g) Chinese leaves
* 1 1/2 tablespoons oil (preferably groundnut)
* 3 tablespoons coarsely chopped garlic
* 1 tablespoon coarsely chopped fresh root ginger
* 1 tablespoon dark soy sauce
* 1 tablespoon Chinese rice wine or dry sherry

1. With your fingers tear the meat from the bones of the chicken. Cut it into large shreds and set aside. Discard the bones. Coarsely chop the Chinese leaves.
2. Heat a wok or large frying-pan, then add the oil, garlic and ginger. Stir-fry the mixture for 10 seconds and add the Chinese leaves. Continue to stir-fry for 5 minutes, add the soy sauce and rice wine and cook for another minute. Then add the smoked chicken and cook through. Serve at once.

Cooking time: 8 minutes
