St-clements-puddingIngredients:
* Crumb Crust
* 225g (8 oz) ginger nuts, digestive or chocolate digestive biscuits, crushed
* 125g (4 oz) Stork margarine, melted

Filling:
* 175g (6 oz) cream cheese
* Rind and juice of 1 small orange
* Rind and juice of 1 lemon
* 1 x 475ml (3/4 pint) can condensed milk
* Decoration
* 150ml (1/4 pint) cream, stiffly whipped
* Orange segments; grated orange rind; a few glace cherries

1. For Crust: Combine ingredients using a wooden spoon and press into base and sides of a greased 20cm (8 inch) flan dish. Chill until firm.
2. For Filling: Whisk all the ingredients together until smooth.
3. Pour into case and chill well.
4. Decorate with a little finely grated orange rind, a few glace cherries and rosettes of whipped cream.

Serves: 4-6.
