Name Spinach with mushrooms and potato

* 1/2 small onion, peeled and chopped
* 1 tbsp vegetable oil
* 100 g (4 oz) mushrooms, diced
* 250 g (9 oz) potatoes, peeled and diced
* 150 ml (5 fl oz) unsalted vegetable stock
* 100 g (4 oz) fresh spinach (English spinach), tough stalks removed, or 50 g (2 oz) frozen spinach

Saute the onion in the oil until softened. Add the mushrooms and saute for 2 to 3 minutes. Add the potatoes and pour over the vegetable stock. Bring to the boil, then cover and simmer for 10 minutes. Add the spinach (carefully washed if fresh) and cook for 2 to 3 minutes. Mash with a fork or puree in a food processor.

Serves: 4 portions
