* 4 cod steaks, about 250 g (8 oz) each
* 6 tablespoons olive oil
* 1 onion, finely sliced into rings
* 2 tomatoes, finely sliced
* 2 tablespoons finely chopped coriander leaves
* 1/2 teaspoon medium hot curry powder
* 2 tablespoons lemon juice
* salt and pepper
* coriander sprigs, to garnish

1. Cut out 4 large squares of heavy-duty foil and grease lightly with a little oil, then place 1 cod steak in the centre of each piece of foil. Put a few onion rings on top of each steak, then a few tomato slices on top of the onions.
2. Sprinkle with the chopped coriander leaves, then mix together the remaining oil, curry powder and lemon juice and pour some over each steak. Season with salt and freshly ground black pepper, then fold the foil over and seal the packages.
3. Place the packages over the hot coals on a preheated barbecue and cook for 20 minutes. Remove the packages and either serve at once, in the foil, or allow to cool, then remove the wrappings and serve the cold cod steaks, garnished with coriander sprigs.
