* 2 pints (1.2 litres) vinegar
* 6 whole cloves
* 1 stick cinnamon
* 1 inch (2.5cm) piece peeled root ginger
* 8 peppercorns

Measure the vinegar into a large microproof bowl with the cloves, cinnamon, ginger and peppercorns. Cover with pierced clear film and heat on full power for 4 minutes. Allow to get cold, then strain the vinegar and discard the spices. If the vinegar is not going to be used straightaway, return to the bottle and seal. Use for pickled onions, cooking red cabbage etc.
