1 lb red cabbage, finely shredded
1 small onion, finely chopped
1 dessert apple, cored and chopped
1 oz butter
2 tablespoons red wine vinegar
2 tablespoons light brown sugar
salt and freshly ground pepper
1/2 teaspoon ground allspice
1/2 teaspoon grated nutmeg
1 teaspoon caraway seeds (optional)
1/4 pint boiling water


Metric
500 g red cabbage, finely shredded
1 small onion, finely chopped
1 dessert apple, cored and chopped
25 g butter
2x 15 ml spoons red wine vinegar
2x 15 ml spoons light brown sugar
salt and freshly ground pepper
1 x 2.5 ml spoon ground allspice
1 x 2.5 ml spoon grated nutmeg
1 x 5 ml spoon caraway seeds (optional)
150 ml boiling water


Combine all the ingredients in a deep dish and mix thoroughly. Cover with cling film and MICROWAVE ON HIGH for 9-11 minutes, until the cabbage is tender, stirring occasionally. Leave to stand covered for 3 minutes, then drain. Adjust the seasoning before serving. Serves 4
