* 500 g (1 lb) lean beef, e.g. rump or entrecote steak
* 2 courgettes, about 250 g (8 oz), thickly sliced
* 1 small orange, cut into 8 wedges

* 6 tablespoons oil
* grated rind of 1 orange
* 2 tablespoons brandy
* 2 tablespoons chopped rosemary or 2 teaspoons dried
* 1 garlic clove, crushed
* salt and pepper

1. Cut the beef into 2.5 cm (1 inch) cubes. Mix all the marinade ingredients together in a bowl.
2. Put the cubed beef in a shallow dish and then spoon over the marinade. Cover the dish and chill in the refrigerator for 4 hours. Remove the beef from the marinade and drain.
3. Thread the beef cubes on to 4 long kebab skewers, alternating with the slices of courgette and the wedges of orange.
4. Arrange the kebabs on an oiled grid, brush with the marinade and cook on an oiled grid over hot coals on a preheated barbecue for 5-6 minutes. Turn the kebabs over and brush with more marinade. Cook for a further 5-6 minutes. Serve hot with rice and a salad.
