* 12-16 pork spare ribs
* oil, for brushing
* 2 tablespoons clear honey
* 3 tablespoons soy sauce
* 3 tablespoons tomato ketchup
* few drops of Tabasco sauce
* 1 small garlic clove, crushed
* pinch of dry mustard
* pinch of paprika
* 4 tablespoons orange juice
* 4 tablespoons wine vinegar
* salt and pepper

1. Separate the meat into individual ribs. Brush with a little oil and cook over hot coals on a preheated barbecue for 15 minutes or until browned, turning several times.
2. Meanwhile, make the barbecue sauce. Mix together the honey, soy sauce, tomato ketchup, Tabasco, garlic, mustard, paprika, and salt and pepper to taste. Stir in the orange juice and vinegar.
3. Brush the barbecue sauce over the spare ribs and continue cooking on the barbecue for about 30 minutes until thoroughly cooked, crisp and slightly charred. Turn the spare ribs occasionally, basting them with the barbecue sauce. Serve piping hot with a crisp salad.
