Smoky Chillied Prawns
* 10 small green chillies
* 20 cooked jumbo prawns, peeled
* 5 tablespoons olive oil
* coarsely ground sea salt
* lemon wedges, to serve
1. Cut the stems off the chillies, then slit the chillies in half and carefully remove the seeds, Avoid rubbing your eyes with your hands when you have touched the chillies as this will burn. Wrap half of each chilli round the middle of a jumbo prawn and thread 5 on to each skewer.
2. Place the skewers in a shallow dish and then cover with the oil and the salt. Leave, covered, in the refrigerator or a cool place for about 30 minutes.
3. Cook the prawns over hot coals on the oiled grid of a preheated barbecue for 3 minutes each side, basting with any leftover marinade. Serve hot with lemon wedges.
