* 500 g (1 lb) boneless rabbit meat
* 3 tablespoons redcurrant jelly
* 4 teaspoons olive oil
* salt and pepper

1. Trim and cut the rabbit meat into serving pieces. Thread the meat on to 4 long kebab skewers and season with salt and pepper.
2. Melt the redcurrant jelly in a small pan over a low heat. Brush the rabbit meat lightly with the melted redcurrant jelly and then with the olive oil.
3. Grill the rabbit over medium to hot coals on a preheated barbecue, turning from time to time, for about 15 minutes or until it is cooked through. Serve at once with some extra redcurrant jelly and baked jacket potatoes.
