* 1 oz (25g) butter
* 1 teaspoon caster sugar
* 2 small
onions, finely chopped
* salt
* 1 oz (25g) flour
* freshly ground black pepper
* 1/2 pint (300ml) water
* a little chopped parsley (optional)
* 2 1/2 oz (62g) can tomato puree
* grated Parmesan cheese for
* 1/2 pint (300ml) milk

Melt the butter in a microproof bowl on full power for 1 minute, add the onion, mix well and cook for 3 minutes. Stir in the flour, then gradually blend in the water, tomato puree, milk, sugar and seasoning. Cover with a lid or pierced clear film and cook on full power for 8 minutes, stirring twice during cooking. Remove from cooker. Stir again and taste to check seasoning. Pour into serving bowls and serve sprinkled with Parmesan cheese and parsley.
