* 125 g (4 oz / 1 cup) self-raising wholewheat flour
* 125 g (4 oz / 1 cup) self-raising white flour
* salt and pepper
* 60 g (2 oz / 1/4 cup) butter or margarine
* about 155 ml (5 fl oz / 2/3 cup) milk

1. Put flours into a large bowl. Season. Add butter or margarine and rub in with the fingertips until mixture resembles breadcrumbs.
2. Stir in sufficient milk to form a dough. Turn onto a lightly floured surface and knead briefly.
3. Roll out dough to a circle measuring 25 cm (10 in). Transfer to a greased baking sheet and use as recipe instructs.

Variation: Stir 2 tablespoons chopped fresh parsley into crumb mixture before adding liquid.
