* 1 tbsp vegetable oil
* 1 onion, peeled and chopped
* 1 clove garlic, crushed
* 1 large carrot, grated
* 500 g (1 lb 2 oz) minced meat
* 125 g (4 1/2 oz) button mushrooms, sliced
* 6 tbsp tomato puree (paste)
* 1 tsp mixed dried herbs
* 1 x 400 g (14 oz) can chopped tomatoes
* 150 ml (5 fl oz) chicken or beef stock
* salt and freshly ground black pepper
* 200 g (7 oz) spaghetti

Heat the oil in a large saucepan or frying pan and saute the onion and garlic for 3 minutes. Add the carrots and saute for 2 minutes. Add the minced meat and saute until browned all over, then add the mushrooms and fry for 2 minutes. Stir in the tomato puree and herbs and cook for 1 minute. Add the chopped tomatoes and stock and season with salt and pepper. Cover and cook for 15 minutes. Meanwhile, cook the spaghetti according to the packet instructions. When it's cooked, drain in a colander and toss with the Bolognese sauce.
