* 1 quantity Traditional Pizza Dough, made up to end of step 2

* 125 g (4 oz) cream cheese
* 250 g (8 oz) thinly sliced smoked salmon
* pepper
* juice of 1/2 lemon
* lemon and chives, to garnish

1. Preheat oven to 200 C (400F/Gas 6). Grease 2 baking sheets. Knock back risen dough and knead briefly. Roll out on a lightly floured surface to 0.3 cm (1/8 in) thick. Using a 7.5 cm (3 in) cutter, cut out as many circles as possible. Keep covered with clean cloth while re-rolling dough and cutting out more to make 10-15 in total.
2. In a bowl, mix cream cheese and smoked salmon together with pepper and lemon juice. Place 1 teaspoon of mixture on one half of each circle. Dampen edges with water, fold over to enclose filling and seal well by pressing with a fork. Transfer to baking sheets and bake for 10-15 minutes until golden. Serve hot or cold, garnished with lemon and chives.
