Red-Cooked-Chicken-Wings_cIngredients:
* 1 1/2 lb (700 g) chicken wings
* 1 tablespoon oil (preferably groundnut)
* 1 tablespoon coarsely chopped fresh root ginger
* 1 tablespoon coarsely chopped garlic
* 1/2 teaspoon salt
* 2 tablespoons dark soy sauce
* 1 tablespoon Chinese rice wine or dry sherry
* 3 tablespoons hoisin sauce
* 2 teaspoons sugar
* 2 teaspoons chilli bean sauce
* 5 fl oz (150ml) water

1. Cut the chicken wings in half at the joint.
2. Heat a wok or large frying-pan, then add the oil, ginger, garlic, and salt. Stir-fry the mixture for 10 seconds. Add all the other ingredients except the wings and simmer for 1 minute. Put in the wings, cover the wok and cook for 15 minutes or until the wings are cooked through. Serve at
once or allow to cool and serve at room temperature.
