1/4 pint orange juice
1 teaspoon bicarbonate of soda
1 oz butter
1/2 teaspoon vanilla essence
3 oz raisins
3 oz soft brown sugar
1 large egg, beaten
6 oz flour
1 teaspoon baking powder
1/4 teaspoon salt
3 oz walnuts, chopped


Metric
150 ml orange juice
1 x 5 ml spoon bicarbonate of soda
25 g butter
1 x 2.5 ml spoon vanilla essence
75 g raisins
75 g soft brown sugar
1 large egg, beaten
175 g flour
1 x 5 ml spoon baking powder
1/2 x 2.5 ml spoon salt
75 g walnuts, chopped


Grease the sides of a 500 g/1 lb loaf-shaped dish and line the base with greaseproof paper. Put the orange juice into a mixing bowl and MICROWAVE ON HIGH for 1-1 1/2 minutes until hot. Stir in the bicarbonate of soda and butter, then add the vanilla essence, raisins and sugar. Stir in the beaten egg, a little at a time.
Sift the flour, baking powder and salt together over the top. Fold in the nuts. Turn the mixture into the dish and smooth the top. MICROWAVE ON HIGH for 7-8 minutes, until just dry on top, giving the dish a quarter-turn every 2 minutes. Cool on a wire rack.
Makes one 500 g/1 lb loaf.
