* 15 fl oz (400 ml) long-grain rice
* 1 1/2 pints (900 ml) water
* 2 tablespoons oil (preferably groundnut)
* 2 teaspoons salt
* 2 tablespoons coarsely chopped fresh root ginger
* 4 eggs, beaten

1. Put the rice in a heavy pan with the water and bring it to the boil. Continue boiling for about 10 minutes or until most of the surface liquid has evaporated. The surface of the rice should have small indentations and look rather like a pitted Crater. At this Point cover the pan with a very tight-fitting lid, turn the heat as low as Possible and let the rice cook undisturbed for 15 minutes more. Remove from the heat and allow to cool thoroughly.
2. Heat a Wok or large frying-Pan, add the oil, salt and ginger and stir-fry for 1 minute. Now add the cooked rice and continue to stir-fry for another 5 minutes. Stir in the eggs and cook for 1 minute. Serve at once or allow to cool and serve at room temperature.

Preparation time: rice - 5 minutes; Quick Fried Rice - 8 minutes
Cooking time: rice-25 minutes; Quick Fried Rice - 7-8 minutes
