* 1 quantity Traditional Pizza Dough, shaped and ready for topping

* 185 g (6oz) Mozzarella cheese
* 4 slices prosciutto (Parma ham)
* 2 tablespoons olive pulp
* 2 tablespoons olive oil
* salt and pepper

To garnish:
* prosciutto (Parma ham)
* few olives
* basil sprigs

1. Preheat oven to 220 C (425F/Gas 7). Make the topping. Cut cheese and prosciutto (Parma ham) into cubes. Place in bowl with olive pulp. Mix together and moisten with a little oil if dry. Spread over dough. Season to taste with salt and pepper and sprinkle with remaining oil. Bake in the oven for 20 minutes until dough is crisp and golden. Garnish with curls of prosciutto (Parma ham), olives and basil sprigs.

Serves: 4

Note: Olive pulp may be bought in jars from Italian food shops.
