Prawns in ginger sauce

Prawns-in-ginger-sauce_cIngredients:
* 1 lb (450 g) fresh uncooked prawns
* 1 teaspoon salt
* 1 teaspoon cornflour
* 1 teaspoon sesame oil
* 1 1/2 tablespoons oil (preferably groundnut)
* 3 tablespoons finely chopped fresh root ginger

For the sauce:
* 2 tablespoons Chinese rice wine or dry sherry
* 1 tablespoon light soy sauce
* 1 tablespoon water
* 1/2 teaspoon salt
* 1 teaspoon sugar
* 2 tablespoons finely chopped fresh coriander
* 2 teaspoons sesame oil

1. Peel the prawns and discard the shells. Using a small sharp knife, partially split the prawns lengthways and remove the fine digestive cord - if you are particularly short of time you can omit this stage. Pat the Prawns dry with kitchen paper and combine them with the salt, cornflour and 1 teaspoon sesame oil.
2. Heat a wok or large frying-pan, then add the oil, prawns and ginger. Stir-fry the mixture for 30 seconds. Then add the sauce ingredients and continue to cook for 2 minutes. Serve at once.
