* 3 tablespoons smooth or crunchy peanut butter
* 2 tablespoons soy sauce
* 1 tablespoon vinegar
* 1 tablespoon stock or water
* 1 teaspoon curry powder
* 500 g (1 lb) pork fillet, cut into 1 cm (1/2 inch) cubes
* salt and pepper

To garnish:
* 2 lemons, cut into wedges
* 1/4 cucumber, cut into chunks

1. Put the peanut butter, soy sauce, vinegar, stock or water, a little salt and some pepper to taste, and the curry powder into a pan. Stir over a gentle heat until the mixture is thick and creamy. Remove from the heat and allow to cool.
2. Stir the pork fillet cubes into the peanut baste mixture. Transfer to a shallow dish, cover and chill in the refrigerator for 4 hours.
3. Thread the pork on to 12 wooden skewers which have been soaked in water. Place on an oiled grid above hot coals on a preheated barbecue and cook for 2 minutes. Turn the satay skewers over and cook for a further 2 minutes. Serve with lemon wedges and cucumber chunks.
