* 1 tablespoon sunflower oil
* 1 large onion, chopped
* 1 tablespoon flour
* 3/4 pint (450ml) cider
* 1 stock cube
* 1 1/2 lb (750g) pork, cut into 1 inch (2.5cm) cubes
* 1 tablespoon apricot jam
* 2oz (50g) raisins
* salt
* freshly ground black pepper
* 1 small Bramley apple, peeled, cored and sliced
* chopped fresh parsley to garnish

1. Measure the oil into a large bowl with the onion, stir to coat the onion with oil, then cook on full power for 3 minutes. Remove from the microwave, stir in the flour, then gradually blend in cider. Crumble in the stock cube, add the pork, jam, raisins and seasoning. Cover with a lid or pierced clear film then cook on low power for about 60 minutes, stirring once during cooking.
2. Add the apple and mix well, then cook on full power for a further 5 minutes. Turn into a warm serving dish, allow to stand for 3 minutes, then serve sprinkled with lots of freshly chopped parsley.
3. Serve with a baked potato and buttered carrots.
