Pork--beansIngredients:
* 6 teaspoons vegetable oil
* 375g (12oz) pork fillet, cut into thin slices
* 1 onion, chopped
* 1 clove garlic, crushed
* 185 g (6 oz / 1 1/4 cups) wholewheat pasta grills
* 440g (14oz / 1 3/4 cups) cancannellini beans
* 9 teaspoons chopped fresh parsley
* 9 teaspoons tomato puree (paste)
* 1 litre(32 fl oz/4cups) chicken stock
* salt and pepper
* chopped fresh parsley, to garnish

1. In a saucepan, heat oil. Add pork, in batches, and fry until browned.
2. Remove pork from pan and set aside. Add onion and garlic to pan and cook until beginning to soften. Return pork to pan, stir in pasta, drained beans, parsley, tomato puree (paste) and stock and season with salt and pepper.
3. Bring to the boil. Cover pan and simmer, stirring occasionally, for about 20 minutes, or until pasta is tender and most of the liquid absorbed. Add more stock if liquid is absorbed before pasta is cooked. Transfer to a warmed serving dish and garnish with chopped parsley. Serve at once.
