* 1 quantity Wholemeal Pizza Dough, shaped and ready for topping

* 500 g (1 lb) clams in the shell or 440 g (14 oz) can clams in juice
* 3 tablespoons olive oil
* 1 quantity Tomato Topping
* salt and pepper
* few drops chilli sauce
* 2 tablespoons chopped fresh parsley

1. Preheat oven to 220C (425F/Gas 7). If using clams in the shell, wash well and place in a saucepan with 1 tablespoon oil. Cover and cook over gentle heat until all the shells open. Remove from heat; strain pan juices into a bowl. Reserve. Remove clams from their shells, reserving a few intact for garnishing. Place shelled clams in reserved juice.
2. Spread Tomato Topping over pizza dough. Sprinkle with remaining oil. Season to taste with salt and pepper, a sprinkling of chilli sauce and 1 tablespoon chopped parsley. Bake in the oven for 15 minutes. Spoon the shelled clams (or canned clams) and a little clam juice over pizza; cook for a further 5 minutes. Arrange reserved clams in shells on top. Sprinkle the pizza with remaining chopped parsley and serve at once.
