* 1 quantity Cornmeal Pizza Dough, made up to end of step 2

* 6 eggs
* salt and pepper
* 1 orange pepper (capsicum), halved and seeded
* 1 yellow pepper (capsicum), halved and seeded
* 2 large or 4 small spring onions
* 1 tablespoon olive oil
* 2 tablespoons chopped fresh parsley
* pepper (capsicum) rings and parsley sprigs, to garnish

1. Preheat oven to 200C (400F/Gas 6). Grease a 25 cm (10 in) deep pan pizza tin. Knock back dough, knead briefly on a lightly floured surface. Place dough in centre of tin, pres out to sides with the knuckles.
2. Beat the eggs together in a bowl with salt and pepper to taste. Set the mixture aside.
3. Slice peppers (capsicums) into strips, slice spring onions thickly. Heat oil in a saucepan, add peppers and onions and cook for 3 minutess stirring constantly. Spoon on top of dough. Pour egg mixture on top. Sprinkle with chopped parsley. Bake in the oven for 20 minutes until the egg mixture is set and golden. Serve at once, garnished with pepper (capsicum) rings and parsley sprigs.
