* 1 quantity Traditional Pizza Dough, shaped and ready for topping
* 2 tablespoons Tomato Topping
* 60 g (2 oz / 1/2 cup) grated Fontina cheese
* 280g (9oz) jarartichokes in oil
* 8 preserved tomatoes in oil
* salt and pepper
* parsley, to garnish

1. Preheat oven to 220C (425F/Gas 7). Spread the dough with Tomato Topping. Sprinkle over the grated Fontina cheese.
2. Drain artichokes, reserving the oil. Drain the tomatoes. Slice artichokes and arrange over the cheese. Chop tomatoes roughly and sprinkle over the artichokes. Season to taste with salt and pepper. Sprinkle with 1-2 tablespoons of the reserved artichoke oil.
3. Bake in the oven for 20 minutes until dough is golden. Serve garnished with parsley.
