* 1 quantity Cornmeal Pizza Dough, made up to end of step 2

* 1 quantity Cheese Topping
* a selection of the following: anchovy fillets, stuffed and plain;
olives; capers; lumpfish roe; cooked prawns; smoked salmon; crispy bacon; smoked quails' eggs; sprigs of fresh herbs

Preheat oven to 220 C (425F/Gas 7). Grease several baking sheets. Knock back risen dough and knead briefly. Roll out dough very thinly and cut out 10-12 small circles with a 4-5 cm (1 1/2 - 2 in) cutter (or cut into fingers, if preferred). Spread with a little Cheese Topping and arrange on baking sheets. Bake in the oven for 15-20 minutes until golden. Top with any selection of toppings and serve at once.
