* 60 g (2 oz) basil leaves
* 60 g (2 oz / 1/2 cup) pine kernels
* 2 cloves garlic
* salt
* 60 g (2 oz / 1/2 cup) grated Parmesan cheese
* 125 ml (4 fl oz / 1/2 cup) olive oil

1. Put basil, pine kernels, garlic and salt into a blender or food processor. Process until mixture forms a smooth paste.
2. Add grated Parmesan cheese to basil mixture in blender or food processor, then process until well blended.
3. Gradually add olive oil, a little at a time, until sauce has a creamy consistency.

Serves: 4-6

Note: Pesto is used as a sauce for pasta, and is also added to dishes such as minestrone soup to give added flavour.

Variation: When fresh basil is unavailable, a version of pesto may be made with parsley, and walnuts may be used instead of pine kernels.
