* 750 g (1 1/2 lb) pork spare ribs
* 2 tablespoons oil
* 2 garlic cloves, crushed
* 5 mm (1/4 inch) piece fresh root ginger, peeled and grated
* 1 green pepper, cored, deseeded and chopped
* pinch of Chinese five spice powder
* 1 tablespoon soy sauce
* 2 tablespoons dry sherry
* 2 tablespoons tomato puree
* 2 tablespoons vinegar
* 2 tablespoons clear honey
* spring onion tassels, to serve

1. Separate the pork into individual ribs. Cook in boiling water for 10 minutes, then drain well. Heat the oil in a frying pan and fry the garlic, ginger, green pepper and five spice powder together for 2-3 minutes. Add the remaining ingredients and stir well. Simmer for 5 minutes.
2. Brush this aromatic mixture over the ribs and cook them over hot coals on a preheated barbecue for 6-8 minutes on each side. Move the ribs to a place above the warm coals and continue grilling for a further 20-30 minutes, brushing frequently with the marinade and turning them. Serve with rice and spring onion tassels.
