Name Mushroom & gruyere salad

* 250 g (8 oz) Gruyere cheese, cut into small cubes
* 125 g (4 oz) closed cup mushrooms, quartered
* 4 large lettuce leaves
* 1 tablespoon finely chopped fresh parsley, to garnish

* 4 tablespoons olive oil
* 2 tablespoons red wine vinegar
* 1 garlic clove, crushed
* 1/2 teaspoon salt
* large pinch of freshly ground black pepper

1. Put all of the dressing ingredients in a screw-top jar and shake until well mixed.
2. Place the cubes of Gruyere and the quartered mushrooms in a mixing bowl and pour over the prepared dressing. Toss to coat and leave for 20 minutes.
3. Line a shallow salad bowl with the lettuce leaves. Spoon the cheese mixture on top of the lettuce and sprinkle with the chopped parsley. Serve at once.
