* 1 quantity Wholemeal Pizza Dough, shaped and ready for topping

* 1-2 tablespoons
French mustard or 30 g (1 oz/6 teaspoons) butter or margarine, melted
* 125 g (4 oz) sliced ham
* 125 g (4 oz) mushrooms, sliced
* 6 tablespoons crushed, sieved tomatoes
* 12 5 g (4 oz/1 cup) grated Cheddar cheese
* salt and pepper
* watercress sprigs, to garnish

1. Preheat oven to 220C (425F/Gas 7). Spread dough with the French mustard, if using, or brush with the melted butter or margarine.
2. Slice the ham diagonally to form diamond shapes. Arrange over dough. Place one-third of the mushrooms in the centre and the remainder in groups around the edge of the pizza. Spoon a little tomato over mushrooms. Sprinkle with grated cheese. Season to taste with salt and pepper and bake in the oven for 20 minutes until dough is crisp and golden and the cheese bubbling. Garnish with watercress.
