* 1 large onion, chopped
* 2 aubergines
* 1 tablespoon sunflower oil
* 1lb (450g) good quality mince
* 1oz (25g) flour
* 14oz (397g) can tomatoes
* 3 1/2 oz (142g) can tomato puree
* 1/4 pint (150ml) good stock
* 2 level teaspoons chopped fresh thyme
* salt
* freshly ground black pepper

For the sauce:
* 3/4 pint (450ml) milk
* 3oz (75g) beurre manie
* a little ground nutmeg
* salt
* freshly ground black pepper
* 6oz (175g) well-flavoured Cheddar
cheese, grated
* 1 egg, beaten

1. Measure the onion and oil into a large microproof bowl, mix well and cook on full power for 3 minutes. Stir in the minced beef and flour and mix well. Gradually blend in the canned tomatoes, puree, stock, thyme and seasoning. Cover with pierced clear film or a lid and cook on full power for 15 minutes, stirring once during cooking.
2. Trim and slice the aubergines, arrange on a large microproof plate and cook on full power for 3 minutes. Drain well on kitchen paper.
3. For the sauce, heat the milk in a bowl for about 3 minutes then whisk in the beurre manie until smooth and thickened. Stir in the nutmeg, seasoning, 4oz (100g) of the cheese and the egg. Mix well.
4. To assemble the moussaka, layer half the meat mixture in a large ovenproof dish, cover with half the aubergines, season, then repeat the layers. Pour over the cheese sauce and sprinkle with the remaining cheese.
5. To serve, cook in the microwave on full power for 10 minutes, reduce setting to medium power and cook for a further 10 minutes. Brown under a hot grill.
