* 50 small open cup mushrooms
* 125 g (4 oz) Camembert, Brie or Cambozola cheese, diced
* 50 g (2 oz) butter, softened
* 125 g (4 oz) walnut pieces, finely chopped
* 2 garlic cloves, crushed
* 2 tablespoons fresh parsley, chopped
* a little milk

1. Trim the stalks off the mushrooms level with the gills. Chop the stalks and put into a bowl with the diced cheese (including the skin), butter, walnuts, garlic, parsley and a little milk. Beat all the ingredients together until well mixed but firm.
2. Place the mushrooms, stalk side up, in a large shallow ovenproof dish or pizza dish. Put a spoonful of the walnut mixture on top of each mushroom, dividing it between them.
3. Place in a preheated oven, 200°C (400°F), Gas Mark 6, and bake for about 8-10 minutes, or [until the mushrooms are just tender, and serve as a starter.
