* 1 tbsp vegetable oil
* 2 onions, peeled and chopped
* 1 clove garlic, crushed
* 1/2 tsp grated fresh ginger
* 500 g (1 lb 2 oz) stewing steak (blade or round) or fillet steak cut into 2.5 cm (1 in) cubes
* 2 tbsp mild curry powder
* 1 green pepper (capsicum), cored, de-seeded and cut into 2.5 cm (1 in) pieces
* 200 ml (8 fl oz) beef stock
* 2 tbsp tomato puree (paste)
* 200 ml (8 fl oz) double (thickened) cream
* 1 tbsp ground almonds
* salt and freshly ground black pepper
* 3 tomatoes, skinned, de-seeded and chopped

Heat the oil in a targe saucepan and fry the onion, garlic and ginger until softened (5 to 6 minutes). Stir in the beef and curry powder and cook until browned all over (2 to 3 minutes). Stir in the green pepper and cook for 1 minute. Stir in the beef stock, tomato puree, double cream and almonds and season with salt. Bring to the boil and simmer for 45 minutes, then stir is the tomatoes and cook until thickened (a further 10 to 15 minutes). Check seasonings.
