Mexicano-MinceIngredients:
* 1 tablespoon sunflower oil
* 1 large onion, chopped
* 2 fat cloves garlic, crushed
* 1 1/2 lb (750g) good-quality minced beef
* 1 small green pepper, cored, seeded and chopped
* 2oz (50g) blanched almonds, roughly chopped (optional)
* 2oz (50g) raisins
* 3/4 pint (450ml) good beef stock
* 4 tablespoons tomato puree
* 1 tablespoon chilli seasoning
* 1 tablespoon caster sugar
* salt
* freshly ground black pepper

Measure the oil, onion and garlic into a large microproof bowl or casserole. Stir to coat onion with oil, then cook on full power for 3 minutes. Remove from the microwave, stir in the remaining ingredients, cover with a lid or pierced clear film and cook on full power for 15 minutes, stirring once during cooking. Allow to stand for 3 minutes, taste to check the seasoning, then serve with plain boiled rice and a green vegetable or a tossed green salad.

Tip: stir in 4 extra tablespoons of tomato puree to make an excellent Bolognaise Sauce for pasta.
