Mascarpone-sauceIngredients:
* 15g (1/2 oz / 3 teaspoons) butter
* 250 g (8 oz/1 cup) mascarpone
* milk
* 90 g (3 oz / 3/4 cup) walnuts, coarsely chopped
* 30g (1oz / 1/4 cup) grated Parmesan cheese
* salt and pepper

1. In a saucepan, melt butter. Gradually stir in mascarpone.
2. Heat gently, stirring until sauce is smooth. Add a little milk if necessary, to give a smooth, creamy consistency.
3. Stir in walnuts and Parmesan cheese. Season with salt and pepper. Serve at once with spaghetti or tagliatelle.
