* 150 g (5 oz) new potatoes, cut in half
* 75 g (3 oz) broccoli florets
* 1/2 red pepper (capsicum), de-seeded and cut into strips

* 1 clove garlic, crushed
* 2 to 3 tbsp lemon juice
* 1/2 tsp lemon zest
* 1 tsp caster sugar
* 1 tsp fresh oregano
* 2 chicken breasts
* 1 courgette (zucchini)
* 1 red onion
* 3 tbsp olive oil

1. Parboil the potatoes for about 10 minutes. Blanch the broccoli and red pepper for 1 minute. Thinly slice the chicken breasts into about six pieces each. Wash and cut the courgette into 12 mm (1/2 in) slices and peel and cut the onion into six to eight wedges.
2. For the marinade, mix together the garlic, lemon juice and zest, caster sugar and oregano. Stir the chicken into the marinade together with the prepared vegetables and leave to marinate for about 30 minutes.
3. Heat the griddle (or you can use a frying pan), brush with a little olive oil and remove the chicken from the marinade and cook for about 3 minutes on each side or until cooked through. Remove and keep warm. Repeat the same process with the vegetables, cooking in batches if necessary. Mix the chicken and vegetables together and serve.
